Healthy Waffle Recipe With 3-Ingredient Coconut Syrup

I've always been someone who struggles with breakfast food. I don't love starting my day with a heavy meal, because I feel like it sticks with me throughout the day - but not in a good way. When choosing my breakfasts, I tend to lean towards smoothies, because they are light yet packed with nutritional ingredients. But there are always days where I am craving something a little heartier. So I decided to create my own waffle recipe, using almost all of the same ingredients as my smoothies, just in a waffle form - if you can believe it!

This healthy waffle recipe is hearty, and yet light and tasty, all at the same time! For this recipe I used Bob's Red Mill Nutritional Booster in Vanilla, but any of these flavors would be amazing. Bob’s Red Mill Nutritional Boosters are plant-based protein at its finest. They're packed with nutritional ingredients, they have probiotic and pre-biotic fiber, and are sweetened with monk fruit. I love having an all natural protein powder that I can pick up at my local grocery store and feel good about using in my smoothies and other recipes!

Healthy Waffle Ingredients
1 scoop Bob's Red Mill Nutritional Booster in Vanilla
1 Banana
1/2 cup Oats
2 Eggs
1/3 cup Coconut Milk
Coconut Oil (for greasing your waffle iron)

Directions
First you will need to slice and mash your banana (slicing it first will make it easier to mash). Place that in a bowl with the other ingredients and whisk them all together until they are well blended. Grease your waffle iron with coconut oil, then place 2/3 cup (more or less, depending on the size of your waffle iron) of the waffle mix into the waffle iron. Let it cook through, like a normal waffle. Top with a bit of butter and my 3-ingredient Coconut Syrup! (recipe below)

Next you're going to need to make your healthy syrup to top off your waffles! This is the easiest recipe in the world, yet it's healthy and you're going to thank me once you try it!

Healthy Syrup Ingredients
1/2 cup Raw Honey
1/4 cup Coconut Milk
1 tsp Vanilla

Directions
In a sauce pan, whisk all three ingredients together over low heat. Stir continuously until completely blended and syrup has begun to steam. Serve over your warm and healthy waffles with strawberry slices!

This recipe is a game-changer for me, because I tend to not enjoy waffles or pancakes in general. But this recipe is so good - I will now be enjoying my mornings with waffles and a side of fruit.
