I'm sure you'll all join me in giving the Autumn season a big 'Hello!' 'Welcome!' and 'I love you!' Yes, it's finally Fall and while I am sad to see Summer go, I am so looking forward to all that Fall has to offer. To kick off the season, I decided to try a new cookie recipe. While I was shopping at Walmart for ingredients, I stumbled upon the new 

M&M's® 

Pecan Pie

and had to give them a try! I knew they'd be the perfect addition to a Fall cookie, and well, I was right. I found this recipe for Pecan Shortbread Cookies c/o Mars and was so glad I did. It was right up my alley in terms of simplicity and taste; sweet, warm, full of Autumn flavor, and oh-so easy to make.

There's something about the changing of the seasons from Summer to Fall that puts me in a baking mood, and I know I'm not the only one. It's a cozy activity that fills the air with nostalgic smells; plus the cooler temperatures send us indoors a little more. MARS Bake In The Fun Sweepstakes

Ingredients

3/4 lb Unsalted Butter at room temperature

1 cup Sugar

1 tsp Pure Vanilla Extract

3 1/2 cups All-Purpose Flour

1/4 tsp Salt

1 1/2 cups Small Diced Pecans

Directions

Preheat oven to 350°

In an electric mixer, mix together the butter and sugar until they are just combined, then add the vanilla and mix. In a separate bowl, sift together the flour and salt, then add them to the butter/ sugar mixture. Add the pecans then mix on low speed until the dough starts to come together.

Dump the dough onto a flat surface that has been dusted with flour, then shape into a flat disc. Wrap in plastic and chill for 10-20 minutes, or until dough is able to be rolled. Roll the dough 1/2 thick and cut into 2 1/2 inch rounds (I used a drinking glass to get the round shape since I didn't have a round cookie cutter). Place the cookies on an ungreased baking sheet and bake for 20-25 min or until the edges begin to brown. (Bake times vary depending on recipe variability.) Allow to cool to room temperature and serve!
